Creamy Spinach Artichoke Dip

1 cup raw cashews, soaked in warm water for 10 minutes (or 1 cup white beans)
½ block silken tofu
1-½ tsp garlic powder
1-½ tsp sea salt
¼ cup nutritional yeast
1 cup plant milk
20 oz frozen spinach, thawed and strained
1 Tbsp fresh minced garlic
2 cans artichoke (in water, not oil)
Instructions
1. Preheat oven to 425℉.
2. Add garlic, frozen spinach, and artichokes to pan and sauté on medium high heat until moisture is cooked out (about 15 minutes).
3. Add soaked cashews, tofu, garlic powder, salt, nutritional yeast, and plant milk to a high-speed blender or food processor. Blend until smooth.
4. Add the sauce to the spinach mixture and stir to combine.
5. Transfer to a 9x9 casserole dish and bake for 25 – 30 minutes or until golden brown on top.
6. Serve warm or room temperature. Serve with whole wheat bread, corn tortillas, and/or fresh vegetables.
