Orange Beet Salad

Yields: 6 servings

Ingredients:

12 oz mixed greens of choice

2 beets, peeled and shredded

10 dried figs, sliced

2 clementines or mandarins, peeled, wedges sectioned and cut in half

Orange Vinaigrette dressing

Optional toppings: sliced green onion, toasted almonds

Instructions:

  1. Place beets into small bowl and add 2 Tbsp of vinaigrette to marinade 1 hour prior to serving.

  2. Rinse and wash greens. Place into large serving bowl.

  3. Add sliced figs, clementines, and beets prior to serving.

  4. Add optional toppings, if desired.

  5. Serve with Orange Vinaigrette.
