No-Beef Barley Stew

Ingredients:

1 large onion

10 cups water

6 cups low-sodium vegetable broth

6 small bay leaves

5 large stalks of celery, sliced

8 oz cremini mushrooms, sliced (optional)

1-1/4 cup barley

2 lbs. golden potatoes, chopped

8 - 10 carrots, sliced

2 - 14.5 oz cans fire-roasted tomatoes

1-1/2 Tbsp Braggs Aminos (or Soy Sauce or Tamari)

2 Tbsp dried basil

1 Tbsp garlic powder

1 Tbsp onion powder

Instructions:

  1. Sauté the onion in a small amount of veggie broth or water.

  2. When onions are translucent, add the celery.

  3. Add water, veggie broth, bay leaves, and barley. Bring to a boil, cover, and simmer for 20 minutes.

  4. Add potatoes, carrots, mushrooms, and barley and cook until tender, approximately 20 - 30 minutes.

  5. Taste and adjust seasoning as needed.

  6. Enjoy!
