Lentil “Meatless” Balls

Lentil Balls

Yield: 16 balls

Ingredients

1 Tbsp ground flax seed

½ cup brown lentils

½ cup quick cooking brown rice

⅓ cup Panko breadcrumbs (oil-free)

¼ cup diced yellow onion

½ tsp garlic powder

½ tsp onion powder

½ tsp dried thyme

½ tsp sea salt

¼ tsp nutmeg

¼ tsp dried sage

⅛ tsp allspice

Black pepper

Instructions

1.       Add ground flax seed to 3 Tbsp water and set aside.

2.       Rinse and sort brown lentils and add to saucepan with 4 cups of water.

3.       Bring to a boil and cook for 5 minutes.

4.       Then add rice and reduce to simmer. Cook for an additional 15 minutes or until rice is tender.

5.       Add rice and lentil mixture to food processor together with the flax seed and rest of the ingredients.

6.       Pulse ingredients until well blended.

7.       Mold into balls and place on a cookie sheet.

8.       Bake at 325⁰F for 20 minutes.
