Veggie Burgers

Serving size: 4 burgers

Prep Time: 15 minutes

Cooking Time: 25 minutes

Ingredients:

1 ½ cups cooked black beans (15 oz can, drained and rinsed)

1 cup old fashioned oats

¼ cup veggies of choice, diced*

¼ cup onions, diced

1 Tbsp Vegan Worcestershire or soy sauce sauce

1 tsp chili powder

½ tsp garlic powder

1 tsp smoked paprika

1 tsp seasoning of choice

pinch cayenne pepper

3 Tbsp ketchup or tomato paste

*Veggie examples: red pepper, zucchini, mushrooms, corn, cilantro, beets

Instructions:

1.       In large bowl, mash black beans with a potato masher.

2.      Dice onion and veggies.

3.      Add all ingredients to bowl with black beans.

4.      Mix thoroughly.

5.      Form into patties with hands and place on a baking sheet (lined with parchment paper if needed) and bake at 350℉ for 25 minutes.

6.      Optional: Serve with sliced tomatoes, lettuce, salsa, hot sauce, and/or mustard.
