Veggie Fajitas
Fajitas
Serving size: 4 (8 fajitas)
Prep Time: 20 minutes
Ingredients:
1 large onion, thinly sliced
1 green pepper, sliced
1 red pepper, sliced
1 small zucchini, halved and sliced
8 oz white mushrooms, quartered
1 tsp chili powder
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1 tsp smoked paprika
8 flour or corn tortillas
Optional toppings: chopped tomatoes, cilantro, lettuce, salsa
Instructions:
Place onion, pepper, zucchini, and mushrooms into frying pan with approximately 2 Tbsp water.
Sauté on medium for approximately 5 minutes and until cooked to your liking.
Sprinkle spices (chili powder, cumin, garlic powder, onion powder, salt, smoked paprika) over vegetables and stir to blend.
Sauté 2 – 3 minutes longer so that the flavors incorporate.
Place a tortilla into a small frying pan and heat for 30 seconds on each side, using tongs to flip. Repeat for remaining tortillas.
Place two tortillas onto a plate. Add about 1/4 cup of vegetables to the center of each tortilla.
Add any additional toppings.
Roll tortilla to enclose filling.
Serve with a side of rice and/or beans, if desired.
