No-Cheese Sauce
Vegan No-Cheese Sauce
Ingredients:
1 cup potato peeled and cubed
½ cup carrot chopped
¼ onion chopped
¼ cup water from cooked vegetables
1 ½ tsp lemon juice
¼ tsp garlic powder
¼ tsp onion powder
½ tsp sea salt
¼ tsp paprika
1 pinch cayenne pepper (optional)
4 Tbsp nutritional yeast (optional)
2 tsp Dijon mustard
½ tsp tamari
Instructions:
Put the prepared potato, carrot, and onion into a pot of water.
Bring pot to a boil and simmer for 20-25 minutes, until the vegetables are soft and easily pierced with a fork.
Reserve ¼ cup of water from the cooked vegetables.
Drain the rest of the water and add the vegetables to a food processor.
Add the remaining ingredients to the food processor and process for 1-2 minutes until completely smooth.
Pour on top of your favorite veggies or baked potato and enjoy!
