No-Cheese Sauce

Vegan No-Cheese Sauce

Ingredients:

  • 1 cup potato peeled and cubed

  • ½ cup carrot chopped

  • ¼ onion chopped

  • ¼ cup water from cooked vegetables

  • 1 ½ tsp lemon juice

  • ¼ tsp garlic powder

  • ¼ tsp onion powder

  • ½ tsp sea salt

  • ¼ tsp paprika

  • 1 pinch cayenne pepper (optional)

  • 4 Tbsp nutritional yeast (optional)

  • 2 tsp Dijon mustard

  • ½ tsp tamari

Instructions:

  1. Put the prepared potato, carrot, and onion into a pot of water.

  2. Bring pot to a boil and simmer for 20-25 minutes, until the vegetables are soft and easily pierced with a fork.

  3. Reserve ¼ cup of water from the cooked vegetables.

  4. Drain the rest of the water and add the vegetables to a food processor.

  5. Add the remaining ingredients to the food processor and process for 1-2 minutes until completely smooth.

  6. Pour on top of your favorite veggies or baked potato and enjoy!
